DESCRIPTION
Ribolla Gialla grapes are harvested at right degree of sugar ripeness e of acidity to obtain a fresh base wine and mineral. They are then subjected to a gentle pressing and soft pressing to extract only the best quality wort. After a period of aging on the lees, the base wine is made sparkling in autoclave. The Charmat method enhances the characteristics of varietal aromaticity, typical freshness and flavor of the vine.
